Ingredients and Quantity
Rice (UNCLE BEN’S) 1.5 cup(s)
Coconut Milk 3 tbsp
Sugar 2 tbsp
Coconut Liqueur 1 tbsp
Raspberries 1 packet
Sugar 1 tbsp
Apricot(s) 2 whole
Kiwi Fruit 2 whole
Strawberries 1 packet
Directions
1. Cook UNCLE BEN’S Rice according to packet directions (do not use any salt).
2. Transfer rice to bowl.
3. Add coconut milk, sugar and coconut liqueur.
4. Mix gently as UNCLE BEN’S Rice cools.
5. Form UNCLE BEN’S Rice into sushi logs by pressing between damp hands.
6. Blend raspberries with sugar in blender and strain.
7. Arrange the fresh fruit in season (cut into slices) on top of each rice log.
8. Serve with raspberry dipping sauce.
